Roasted to Full City (225 Deg C) the brew has a full body with nippy acidity and a rich flavour. The mouthfeel is wonderfully creamy and the citrus bursts can be sharp with hints of tangerine and nutmeg. As the acidity subsides the cocoa breaks through along with a sweet vanilla spice (from the Inga trees) and mixes well on the palate leaving a rich and abundant flavour in the mouth. Roast lighter for more of the amazing citrus or roast up to 230 Deg C to bring out the aroma of the Inga trees and add a slightly woody nose to the cup.
